Black Bean Sauce 3 tb Chicken broth
3 tb Fermented black beans
1 ts Dried chili flakes
1 ts Sugar
2 tb Dry sherry
1 ts Ginger -- finely grated
2 Garlic cloves -- minced
Water and cornstarch mixture
Rinse black beans in cold water to remove salt. Crush coarsely with back of knife. Combine beans with all other ingredients in a small saucepan and heat to boiling. Thicken with mixture of cornstarch and water until correct consistency. Sauce should be thick enough to easily coat back of spoon.
