Black Bean Sauce 1 tb Vegetable oil
2 ts Minced fresh ginger
2 ea Cloves garlic
1/2 c Chicken stock
1 tb Soy sauce
2 tb Dry sherry
1/2 ts Sugar
1/2 ts Hot chile paste
2 ts Cornstarch
3 tb Fermented black beans
2 ts Sesame oil
In a small sauce pan heat oil and fry ginger and garlic. Add stock, soya, sherry, sugar and chile paste. Stir and bring to a boil. Make a slurry of the starch and a little water and stir in. As the sauce thickens add the black beans. Take off the heat and just before serving stir in the sesame oil.
