Beef Congee 1 c Rice -- wash well & drain
3 qt Water
2 c Beef Broth
1 Scallion -- chopped
2 c Beef -- shredded
Seasonings
1 tb Soy Sauce
1 ts Sugar
1/2 ts Sesame Oil
Salt And Pepper
Marinate the beef shreds in the soy sauce.
Bring the rice and water to a boil in a large saucepan. Cover and simmer for 1 1/2 hrs without stirring.
Add the two cups of broth and sugar, bringing it to a boil. Stir in the beef and when the rice again boils turn down the heat.
Simmer for 15 mins more. Stir in the chopped scallions, sesame oil, salt and pepper.
